WASSAIL

 Wassail is a traditional warm, spiced beverage often associated with Christmas and winter celebrations. Here's a simple recipe to make wassail:

Ingredients:

  • 4 cups apple cider
  • 2 cups orange juice
  • 1 cup cranberry juice
  • 1/4 cup lemon juice
  • 1/4 cup honey or brown sugar (adjust the sweetness to your taste)
  • 4 cinnamon sticks
  • 1 teaspoon whole cloves
  • 1 teaspoon ground ginger
  • Optional: sliced apples and oranges for garnish

Instructions:

  1. In a large pot, combine the apple cider, orange juice, cranberry juice, and lemon juice.
  2. Add the honey or brown sugar to sweeten the wassail. Stir until it dissolves.
  3. Place the cinnamon sticks, whole cloves, and ground ginger in a piece of cheesecloth or a tea infuser. This will make it easier to remove the spices later.
  4. Add the spice bundle to the pot and bring the mixture to a simmer over medium heat. Let it simmer for about 15-20 minutes, allowing the flavors to meld together.
  5. Remove the spice bundle from the pot, and you can discard it.
  6. Ladle the wassail into mugs, garnish with apple and orange slices if desired, and serve it warm.
